Fresh sweet corn has been and is a staple for any American family whether you’re in a tribe from the south or from the north. Before we get into the soulful message about corn let’s evaluate how it could be good for you since most people consider corn to have no nutritional value. Truth bomb- corn is high in insoluble fiber, which means it is less likely to spike blood sugar, making it a healthier carbohydrate choice. instead of debating corn…can’t we just think of it as treat instead of discounting it?

In my mind, corn is a treat and good for me because I think of it as comfort food. I love the fond memories it brings back to me about the story of the Indians back in my school days. It satisfies my soul! How about you?

I learned as a child, Corn, also known as Maize, was an important crop to the Native American Indian. Eaten at almost every meal, this was one of the Indians main foods.

Not only is it a tradition in my family as well but it’s so effortless to prepare.

It’s a simple, buttery recipe for summer sides when corn on the cob is plentiful…

There’s three main ingredients (butter, sugar, corn) that come together to create a delicious and easy summertime side dish.

This is such a simple recipe. Simply allow the corn, sugar, and butter simmer together over medium heat until nice and creamy.

The end result is a sweet and savory, golden side dish.

No wonder the Indians loved this wholesome, God-given food.

Simply follow the recipe below for this traditional, comfort food…

These golden nuggets are so satisfying!

Recipe Details:

Yield: 8 servings

Prep time: 5 minutes

Cook time: 15 minutes

Total cook time: 20 mins

Ingredients:

*6 ears of fresh sweet corn, shucked

*1/2 stick of butter (4 tablespoons)

*3 tablespoons sugar

*1/4 C water

Instructions…

Using a sharp knife, cut the corn off of each cob, and place in a large bowl.

Then take the knife and scape each cob for a second time to release the extra juice from the cob into the bowl.

Add the sugar to the corn and stir to combine.

Meanwhile heat 2tbsp. of butter in a large skillet (cast iron skillet works well) over medium heat.

Add the corn and water. Season with salt and pepper.

Let the corn simmer for about 10 minutes.

Top with remaining two tbsp. of butter, stir to combine and serve!
